Fruit Cobbler Cake
This is so easy and fun to make. Of course, nothing about it is remotely healthy, except the fruit. But it’s great if you don’t have a lot of time when preparing for guests. It takes a while to cook but takes very little time to get it into the oven. It’s always a big hit.

Ingredients
- 1/2 cup sugar
- 1 cup flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 cup milk (whole milk or skim milk or anything in between is fine)
- 5 T. butter
- 2 cups fresh or frozen fruit such as blueberries, peaches, cherries, apples, other berries. If fruit is frozen, do not thaw. (We've only tried this with fresh peaches, frozen blueberries, and cherries so far.) (Not all at the same time.)
- vanilla ice cream or whipped cream
Instructions
- Preheat oven to 350 degrees.
- Melt butter in a small glass loaf pan or casserole dish and swish it around the bottom. (You can stick in the hot oven to do this or do carefully in microwave.)
- Mix dry ingredients in a bowl.
- Stir in milk and mix well.
- Pour the batter over the butter.
- Spoon the fruit on top. Do not mix the fruit into the batter.
- Bake for 45 to 50 minutes or more. It should be golden brown (almost crispy) on the outside. Be sure inside is not too gooey. Test with toothpick. (It won’t brown as much on top where there is no butter.)
- Serve hot with vanilla ice cream or whipped cream. It's also good cold.
Variations we might try sometime (untested, try at your own risk!!)
- Use whole wheat flour.
- Replace some of the flour with oatmeal. Of course, then it becomes a crisp, sort of.
- Use a bit less sugar.
- Use olive oil instead of butter. (Kidding!!)
