Cold Rice Noobldes With Grilled Chicken and Peanut Sauce

Charlie spotted this recipe in the New York Times. We tried it and it is delicious. Easy but takes a while. Lots of ingredients. But worth every minute.

Variations:
  1. We leave out the bean sprouts.
  2. We use pre-cooked chicken we've already roasted. Toss it with the marinade ingredients and heated it all in a skillet. Yum.
  3. We didn't have cucumbers the first time we made it and it was fine without -- just use 3 or 4 carrots instead of 1.
  4. We didn't have mint the first time we made it and it was fine without. Still plenty of complex flavors.
