Our oven air fryer is very large. It's essentially a large mesh tray that fits into our oven like an oven rack. It can accommodate the number of potatoes given here. If your air fryer is smaller you might want to halve or quarter the recipe.

Ingredients

  • 4 medium sweet potatoes
  • 2 tbsp cornstarch
  • 2 tbsp olive oil (you might try using less; I plan to do that next time)
  • 1 tsp garlic powder (or garlic granules)
  • 1/2 tsp smoked paprica
  • 1 tsp salt

Instructions

  • Cut the fries into thin wedges. 1/8 to 1/4 thick. The thinner they are the crispier they will be.
  • Place in a large bowl and add quite a bit of ice and cold water.
  • Let soak for 30 minutes. (This will pull out excess starch.)
  • Preheat air fryer to 380.
  • Drain and dry thoroughly with clean kitchen towels.
  • Toss the bone-dry fries in a large bowl with the cornstarch until lightly coated.
  • Add the olive oil and toss to coat.
  • Add the spices and toss to coat. (Hold the salt till after they are cooked to prevent moisture from drawing out.)
  • Spread in a single layer in the air fryer. It's ok if they touch, but do not touch.
  • Cook for 12 to 20 minutes. Watch carefully.
  • With our air fryer we don't have to shake or turn but you might need to do that with a different air fryer.
  • Cook until tender on the inside, crispy on the outside, but not burned.
  • Toss with the salt.
